Entertaining: My Favorite Christmas Cocktail
My sister introduced me to “The Poinsettia” last year and it’s quickly become my favorite festive cocktail! I’ve already made them twice this season, and I think I may whip up a pitcher for Christmas Eve! I hope you have a wonderful holiday. 1/4 cup champagne
1/4 cup vodka
1/2 cup cranberry juice
sugared cranberries to garnish (recipe below)
*This recipe can easily be made for a crowd, just follow the same proportions. I use a dry champagne, but you can use any sparkling wine you prefer. I also use a sweetened sparkling cranberry juice instead of 100% cranberry for an added sweetness.
Sugared Cranberries
Soak fresh cranberries in simple syrup (1:1 sugar and water mixture) for 10-30 minutes. Lay out cranberries to dry and become tacky for at least 30 minutes (or longer). Put two spoonfuls of sugar on a piece of wax or parchment paper and roll cranberries in sugar to coat. Let dry completely and then freeze if desired and garnish your drinks!
